Meat 'n potato pie recipe

Meat 'n potato pie recipe is a delicious variation on the Shepherds Pie recipe. A ground beef crust filled with cheesy potatoes is sure to please.

1 pound ground beef

1 4 oz can drained mushrooms

1 egg

1/3 cup diced onion

1/4 cup dry bread crumbs

1 tsp salt, dash pepper

2 cups chopped, cooked potatoes

3 Tablespoons milk

1/2 pound Velveeta cheese

1 Tablespoon parsley (optional)

1/4 tsp salt

Combine meat, egg, chopped mushrooms, onion, bread crumbs, salt and pepper. Mix lightly and press into bottom and sides of a 9" pie plate. (deep-dish works great) Bake at 400 degrees for 25-35 minutes or until it looks done.

Remove meat shell from oven. Reduce oven temp to 350 degrees and drain excess fat from meat shell.

Mash the hot cooked potatoes with milk and stir in cubed Velveeta, parsley, and salt. Fill hot meat shell with potato mixture.

Return to oven and continue baking at 350 degrees for 10-15 minutes.
